Prep

Preheat oven to 450° F (230° C).

Coarsely crack the peppercorns in the mortar and pestle or put them in a plastic bag and hit them with the back of a heavy knife or rolling pin to crush.

Rinse the steak then pat very dry with paper towels. Rub all over with 1 tablespoon oil. Season each side with 1 teaspoon salt. Spread 2-1/4 tablespoons (18 g) crushed peppercorns over the top of the steak and firmly press down with your fingers so that they adhere to the steak. Only do this to one side.
